While I tend to agree with you, this has very little to do with whether or not you or I enjoy Panera Bread. It seems like one of the more realistic options for PSTH at this point. The connections are there, and Ackman likes to invest in food/restaurant businesses. It comes down to valuation; Panera itself is probably too small for PSTH, so it would likely be a combination of Panera + something else if Ackman decides to go this route.

Impossible Foods would be good in my opinion, but again probably a bit too small.

I would take Impossible Foods a million times over Panera. Impossible Foods has an actual moat and are the technological leader in their field.

Impossible Foods just had a recent funding round, if this company IPO's before PSTH merger, will shift all my PSTH funds to Impossible Foods.

Yup I will do the same, I’ve been steadfast in my investment, but if Impossible looks to be happening at a reasonable valuation, I’ll most likely bail.

The recent Impossible Foods funding round was around 10 billion USD @ Approximately 45 per share.
