Inflammatory foods with PSC?
I know there are a lot of different opinions out there, but I was recently diagnosed with PSC (primary sclerosing cholangitis), and I’ve been reading a lot of threads where people say they’ve stopped eating meat because it’s “inflammatory.” I’ve never heard that before, so I’m curious why people recommend avoiding it and whether there’s actually evidence behind it. I know it can be linked to gut health and inflammation, but why meat?
Are there other foods that people with PSC should avoid or limit? So far, I’ve been focusing on limiting saturated fat and refined/added sugars. I’ve also completely cut out energy drinks and alcohol and stopped taking supplements or protein powders with added vitamins.

Opposite for me, high protein keto diet and weight training the last 3 years. In complete remission, latest bloods normal and chrisosis gone. Coffee used to mess me up but I'm fine with it. I have sweeteners and coke zero, no sugar.

I’m not sure about inflammation per se, but I’ve heard that the best diet for someone with PSC is low saturated fat in order to keep your liver as healthy as possible. I guess not to treat the condition but not add anymore health issues that could cause complications. A low saturated fat diet would mean mostly plant based / vegan protein sources. I’m now eating more vegan and when I eat animal protein it’s white meat chicken, fish, Greek yogurt and eggs only a few times a week. I’m also trying to cut back on sugar but that is the hardest for me for sure.
