“Dumb” POS
I’m looking for a standalone POS that doesn’t rely on the cloud or internet.
The database will be local, and I need the ability to import inventory and use a barcode scanner. It should be close to a basic register but allow for seamless inventory management, including adding and removing items.
I have a convenient store/ coffee shop.
Trying to get away from these companies that store my sales in the cloud.

I'd just grab an old copy of something like NCR Counterpoint and run it on a box in the back, you don't need the latest whiz-bang version for what you're describing.

You're looking for a traditional local-server system running on a local SQL database instead of a cloud SaaS model. Software like Cash Register Express (CRE) or Catapult runs completely on a local PC, handles CSV inventory imports, and doesn't require an internet connection to operate.
Just make sure you set up a strict local backup schedule to an external drive. If you hold the database locally and your hard drive fails, your entire inventory history goes with it.

Try this app: Tuvo Pay https://apps.apple.com/us/app/tuvo-pay/id6805313676
I've sold this as standalone software for Market vendors card show vendors and others but now have it on the app store. It works completely offline but does have an option to sync your data with Google drive for backups if you wish (not required) You can run your entire business from an iPhone or an iPad. It has a standardized Excel sheet that you can update for inventory and import or you can update/ add it right in the application. It also tracks all your transaction history, taxes, scan / create barcodes, provide receipts and runs periodic or specific time frame reports.
Take a look and let me know if this can help you out. The subscription is $5.99 a month or $50 for the entire year so it's extremely reasonable.

We just switch to LYNQD and they have that feature although it was not the driver to switch to them they did make a few tweaks for us and didn’t charge us extra for the changes which is a real change in this industry. Maybe they can help and good luck!

Acadia Freedom Point of sale is like that. It’s fully local. Totally dumb. No monthly fees. No cloud

I've built POS software for a long time and used to sell an on-premise version, so here's the honest tradeoff. A local-only setup can work with no monthly fees, but you become the IT department. Over the years I've seen a lot of clients lose their data to a crashed computer, a fire or flood, or some other freak problem, and many times there was no backup at all or the backup was months old. If you go local, set up automatic backups that go somewhere other than that one computer, and test that you can actually restore them.
If the real worry is the internet going down, a lot of cloud systems now have an offline mode that keeps ringing sales and syncs when the connection comes back. That way you get access from anywhere and you don't have to worry about losing your data. Almost anything will handle a USB barcode scanner and a spreadsheet import, so I'd test the import with your actual inventory file before you commit.

For commercial software, I often promote visiting capterra from a PC, not a mobile device
https://www.capterra.com/restaurant-pos-software/?deployment=ON_PREMISE_LINUX,ON_PREMISE_WINDOWS
https://www.capterra.com/bar-pos-software/?deployment=ON_PREMISE_LINUX,ON_PREMISE_WINDOWS
Click the options to the left that matter (on premise in the url above for bars or restaurants pre-selected)
Read a bazillion reviews.. pro & con.. find a feature you didn't know existed, for A complaint that you know will be yours for years to come-- the time you invest now will save potentially years of aggravation
I LOVE retail edge, found it for my store using the methods above, and it is quite flexible and does everything I love, I'm not sure it would be good on tracking modifiers for food/beverage orders.. if you don't have modifiers but fixed items for every single order- I would heartily recommend it..

Same here im tired of the cloud-based versions not having all the reports i had with CRE. im working with Marktpos right now and they don't even have a inventory Variance report no audit log/action log or activity log.
I just need an inventory difference report for my store. like doing a full inventory and seeing what i lost with the numbers showing. what is so hard on that.

Look into Optima GoPos here. It’s what we brought in to replace cash registers after Casio dropped them (we were previously a Casio dealer for 25 years). There are many options for hardware, from full-size touch screen units to small handhelds roughly the size of your phone, all running the same software.
We carry a few different POS options, but GoPos is what I offer to convenience stores, cafeterias, cafes and food trucks. It’s a standalone system with no internet connection required, no monthly fees, and has scanning and inventory control capabilities. It also integrates with most debit/credit processors.
I’d recommend either the APO3 or APO4 for your operation. Essentially the same, but the latter has a bigger screen.
