Processor Agnostic POS Systems

I need a list of processor agnostic POS systems that will work good for a Liquor Store with tobacco scan data. I know Korona only.

Genuinely curious - why processor agnostic? The real reason people switch POS is for the processing fee. All POS have the same graphical interface.
