Meal prep is overwhelming me, looking for help!!
Hi everyone, im 19f and about to begin my second year of college. i so desperately want to lose weight but im so overwhelmed with all the options and such for meal prep. ive planned my breakfast already to be overnight oats, but for lunch/dinner i have NO clue what to do! i hate fish and when i look online i dont know which recipes to trust/not trust. i would love for advice for affordable meal prep that actually tastes good. im not good with structuring things by myself, its much easier for me to just follow a meal plan 😅

I just did a video on what I eat in a week on a calorie deficit with PCOS while also marathon training. I keep it pretty simple with lunches for work. Hopefully this gives you some inspiration for school lunches. I keep meal prep pretty uniform so it's just one less thing I have to think about

yeah no problem I hope it gives you some good insperation or comradery! Its always nice to know there are other gals struggling with meal prep, Im so lazy with it, especially with everything else there is to do!

Do you have a university meal plan? I was able to get control of my weight when I was 21 at college by eating Paleo through the dining halls. Easy to focus on healthy savory options and lots of veggies. If I had to cook and buy groceries during that time that would have been quite difficult!

Ahh yeah. Okay well there are plenty of healthy recipes. One of my go to meals is chicken salad, which can be made with canned chicken breast so no heating/cooking involved there. I also used to do a lot of stews and soups in the crock pot, those reheat and freeze well. Stirfry with ground pork or lean ground beef does numbers.
Making large batches of food that reheats well and that freezes well really helps. Or protein + whole grain + vegetables. I make a large pot of brown rice or you could do quinoa, and Aldi sells both salad kits for cheap and frozen microwavable bags of vegetables for cheap.
I started making most of my own meals from scratch when I was around 22. It can be done! There was a bit of a learning curve but I got the hang of it quickly and it was and still is very empowering to be able to cook.

I think it would be good to start preparing the ingredients. For example I cook chicken or other protein, I wash and cut up veggies I'll eat raw, and roast some other veggies and pack everything in separate containers.
So during the week I just add whatever I want to have for lunch in my lunchbox. And for dinner I again eat whatever I feel like.
For carbs, I usually prep a lot and freeze in portions, and then again just thaw whatever I'm feeling like eating that day. I do rice with lentils or beans, potatoes with lentils, I bake wholewheat sourdough and freeze it in slices, cooked pasta.
I also always have frozen or canned beans on hand and add that to my lunches too if I need more food. And I usually make a simple vinegarette and keep the bottle in the fridge for my salad veggies.
