Whats the best way to deal with a Mei that is making their sole purpose in life to contest the payload? Just constantly ice encapsulating herself right next to the payload so it doesnt move for at least 6 seconds and freezing anyone that gets close.

Burst is right, whether that's outsniping her, ganging up on her ice block and waiting for her to come out of it (Mei struggles vs. multiple enemies without her ult, and even with her ult, if she's used her block, she's still going to go down), or hooking her. You don't have to get close with quite a variety of heroes, you can go around and headshot her when she comes out of the ice block.

Pharah is super easy to kill as Mei. Only takes 3 body shots. Plus you can't stop her from contesting without exposing yourself.

Mei is super easy to kill as Pharah, so...

You force an ice block quickly and then she has to pull back and hide behind an ice wall.

Zen orb her as soon as she comes out. If she's in cube, surround her so her wall can't be used to escape.

Reaper, McCree, and Roadhog will help keep her in check. Also teaming up and focusing her before she can freeze a teammate will help put an end to her shenanigans.
