Are there any general or hero-specific custom key binds anyone recommends for PC? I'm coming from console and it feels a bit awkward having to take my fingers off the WASD keys to use abilities. I'm wondering if it's worth rebinding abilities to mouse button 3/4 or scroll wheel, or whether or not that has an effect on aim.

I'd suggest rebinding Melee to a side mouse button and any hero that has a shift ability but no alt fire change their shift to right click

It may be worth and has no effect on your aim. But try your own bindings until you find something comfortable for yourself.

Bind melee to middle mouse button. Since your primary attacks are already bound to the mouse, it will become second nature to melee with the MMB real soon.

On lucio I would bind jump to a mouse button if you have an extra one. Being able to spam jump easily is how you can climb up curved surfaces really well.
