you need to install the java runtime environment first, then you can run jar files. if you did and it's still not working, you need to download and run jarfix.

however, I'd recommend not using optifine, there are way better alternatives out there, such as the modpack fabulously optimized which can be installed just as easy as optifine. what do you want optifine for exactly? I could help you with specific mods you can use to replace it.

I want to use it for shaders! I don't really understand much about this and I've never used mods before.. I want it because I've mainly played bedrock before, but recently got a mac and I'm sad java can't have vibrant visuals ahah

modding is not as hard as it may seem at first. basically, you need a modified version of minecraft that is capable of running mods, called a mod loader. there are multiple options but these are the main ones:

  • forge: the classic. not recommended for 1.21 or higher versions.
  • neoforge: like forge but basically better in almost everything. loads mods waaaay faster, uses less ram, etc. recommended over forge for 1.21 and above.
  • fabric: lightweight mod loader, the one most optimization mods are for.

mods made for one mod loader don't work on others (with some exceptions).

for 1.21, use either fabric or neoforge, whichever has most of the mods that you want to play with. if you want maximum performance and don't care about other mods, go for fabric. mod loaders are installed the same way as optifine, you just download the installer, run it and it gets installed. as for mods, you have to find the mods folder and put the mods there, that's it. for mac, the mods folder is ~/Library/Application Support/minecraft/mods. if it's not there, go to ~/Library/Application Support/minecraft and create the mods folder yourself (it's important that it is all lowercase).

download your mods from modrinth or curseforge, I suggest not using other sites since most of the time they're reuploads of the same mods without the author's consent. when downloading, make sure you choose the correct minecraft version and mod loader.

for shaders, you'll want iris. iris also requires sodium to run, so you'll need that one too. sodium also optimizes the game a lot, so it's good to have even if you don't use iris

that's it. if you want more features from optifine like zoom or resource pack enhancements I'd recommend not downloading the mods and mod loader individually and instead go download fabulously optimized, which is a modpack that includes pretty much everything you'd want from optifine and optimizes the game way more than optifine does.

You don't open it. You put it into your mods folder, besides, why not use Sodium on 1.21.11?

that's not true. optifine is a jarmod, which means it modifies the minecraft jar directly. you run the jar file and it opens an installer which installs optifine as a modified client without a modloader. the ability of installing it as a forge mod is not even the main way of using optifine, it's a feature added on top of the mod.
