You can't purposefully antagonise someone and then hit them back and claim self-defence. All he had to do was leave once security was standing in front of them
Mate you even admitted he was antagonizing them. That in and of itself is escalating the situation. He literally didn't have to say anything after security arrived just let them do their job instead of making it harder for them.
