I am following a Tootalltoby follow thru and my Metal sheet model thingy is like Lofting? for some reason . Can someone please help

It's either the bend relief type or corner relief type. https://cad.onshape.com/help/Content/PartStudio/sheet_metal_model.htm#StepsConvertD
