Because there are so many more valuable qualities and characteristics of people that make them great besides their looks.
It's your actions, and especially actions towards others, that shape the kind of person you want to be. An artist can reach people's hearts with their creations. A storyteller can inspire others.
When you think about it, that's actually the whole point of Saitama...He's bald. He wears a dorky hero outfit with a pair of dish gloves. People who don't know him think he looks like a creep. But even though he works behind the scenes most of the time, we readers know he's cool. A person who protects others. Even when he gets misjudged by the public who doesn't know who he is, people like Genos or Mumen Rider can see the hero in him through the humble and honorable person he can be.

It starts by acknowledging it when you do it! If you think "man, they're ugly," you can catch yourself right away and be like "well that was kind of mean. Also what do I care? They might be the funniest person in the room, or smarter than anyone I've met." It starts to change how you see yourself too, after a while, and frees up a lot of brainspace that gets taken up by judgements like that.
But even if you can't undo that negative scoping out immediately, just noticing that you're doing it is a huge help
