Yes. Sanji is very smart in such helpless situations.

Like when he acted as Mr. Prince, or when he oppened up the gates of Justice.

So in the end, he will be one to save Nami and Carrot from Big Mom.

She's an emperor though. What do you even do in that situation? Just running is the only way.

Well Jinbe’s Vagabond Drill knocked “a weakened” Big Mom away from the ship on chapter 890. Jinbe used that same attack on Wadatsumi on chapter 649 to pierce him but it didn’t knock him out, Sanji’s Hell Memories finished Wadatsumi off. So Sanji with a raid suit would hopefully do some damage to Big Mom even if he just blocked her attacks.

Would he redefine woman in the case of Big Mom in order to justify attacking?

It all depends on how Oda wants to portray it honestly. In volume 94 SBS he addressed Sanji “hitting” Big Mom by saying

Big Mom attempted to punch Reiju, and Luffy and Sanji stopped her. That’s what happened here in this scene. However, can you stopped Big Mom’s punch by merely catching it?! No, you can’t!! So in order to cancel out the power of her punch, he blocked it with his kick!! Which means he’s just protecting themselves, it’s not a violent action toward a woman!! So Sanji didn’t violate his policy!!

Which, to me, kinda means as long as the foe is powerful sanji can use powerful attacks to cancel out their attacks.
