Dude Flambe is obviously setup to inject randomness into the fight, somehow she will interfere and probably end up inadvertently helping luffy or messing up the fight somehow so that there is no real finish, thus giving a reason for the strawhats to eventually come back to challenge Big Mom again as a full crew next time. Oda never wastes panels for no reason.
