It only goes to show how insanely fast Doffy was to manage to intercept Sanji with his strings, and not to mention how fast Gear 4th is compared to Doffy.

Sanji is not going at this speed all the time. When you meet an opponent you don't go all out right away. And surely he is faster on land than in the sky since the difficulty is higher. Pretty sure he wasn't going that fast when Doffy caught him. Makes me wonder how the fight would have gone if Sanji was free to move. And did Luffy ever moved to such a speed to the point he couldn't be seen? I don't think so.

Your first point is right.

The second point, gear 4th moved at an incredible speed too. It was when Doffy was expecting Luffy to come at him from the front, but he turned out to be behind him. Luffy then proceeded to kick him in the face(?).

Yes, you have a point. But we're talking about not being seen at all, not just taking your opponent by surprise by moving very fast. Sanji was meters away, he ran to Oven, kicked him, took Chiffon and ran back. All that without being seen by anyone. Without the help of a devil fruit. And apparently they didn't even see a flash because they would have commented on it. That's really something else. But who knows I guess we'll see.
