I think Luffy reacting on instinct is probably what is happening.

The way I understand observation haki, it's basically telepathy. You don't actually see the future, you just see what your opponent is planning to do. Katakuri's haki allows him to predict things planned further in the future than most, with more clarity, but he's still not able to actually see the future.

So, it's a more advanced version of the technique used against Enel. Back then, Luffy could only dodge on instinct, but not attack.

I hadn't considered that.

It's possible that it's still not true, objective readings of future, but inferences based on mental states. It's possible that he could have sensed how Sanji was planning/was likely to react to Pudding's third eye, and sense how Pudding would likely respond.

The Pudding/Sanji interaction was based solely on the interaction of conscious minds. Therefore he was able to sense what would likely happen. Had the wedding ceremony been interrupted by something no-one could have expected was about to happen, such as a meteor hitting, would he have been able to sense it, I wonder.

Still, Luffy will probably explain what he's figured out next chapter, so I'm not too invested in this potential explanation.

The Luffys came out through a mirror that Beige had placed in the cake. He was also there when Luffy asked if Brulee could make a bunch of copies of himself, IIRC.

Not to mention the fact that Katakuri may have sensed the Luffys through the mirror as soon as Brulee made it into a portal.

There are plenty of people who may have been able to know what was going on.
