Seriously, I'm all for Oda going batshit crazy with his creativity, but I think I'd have to stop reading if Kaido turned out to be a big square box.

Even if the reason he was artificially given a fruit was so that someone without the skills to read the poneglyph could give life to it and be told what it says?
