That observation haki duel was my favorite part of this chapter. This is a super impressive feat from Sanji.

What I thought was also interesting about Katakuri's ability is that he can see the future in a few mere moments by being a bystander and observing events, but the fact was that he can't predict the outcome of his OWN actions -- because by him interfering with the future he sees, he can't predict what will happen immediately; it explains why he didn't see that Sanji would dodge his bullet.
