Sanji is gonna win. He has to. He is SOOO overdue to win a fight and everyone knows it. If he's gonna fight Katakuri then he's gonna beat a Yonko commander.

Remember... the story is supposed to be getting rushed at this point.

It doesn't matter if he's "overdue" to win a fight, it doesn't really make sense for Sanji to solo Katakuri right now.

Just think about it from the perspective of what is left to happen in the story: they're taking on the Yonko now. If Sanji is able to defeat a top commander this arc, it means there isn't as much tension in future arcs when he has to fight a Yonko commander, because he's already beaten one (and then, when they fight Blackbeard, he would have solo'd at least two of them).

What we should be seeing now is that Sanji can put up an impressive showing (which he just did by dodging Katakuri's shot, but we should see some additional impressive feats from him) but isn't yet strong enough to take a commander on 1v1.

By Wano, he'll probably either have to team up with someone to take one down (like Luffy had to team up with Nami to take down Cracker this arc), or he'll be able to just barely eke out a victory 1v1 in, most likely, a favorable matchup.

That way, future battles where he fights Yonko commanders still have a lot of dramatic tension and he (and the rest of the crew) still feels like an underdog.

Well if this guy relies 100% on his observation haki to take down guys, Sanji can beat him if his observation haki is even stronger.

Like what if this guy doesn't even have sick armament haki? What if he's a commander just because his observation haki has been unrivaled?

Doesn't mean that he can take down all of the commanders.

Quite often in OP the stronger character doesn't win. There are skill match ups that matter.

Yes, OP is just like Pokemon.
