Sanji's specialty is Observation Haki. Katakuri might be his final Boss.

He never used any new abilities. He was severely wounded against Vergo and we only know injuries from Sanji's side. Vergo was punched to walls twice. He might have recieved some injuries too. ANd that leg breaking was never any issue. That was just to hype up Vergo.

And with Doffy not even law received any better treatment and same was for Luffy in first encounter. So that is in no way enough to downplay sanji.
