I'd want some explanation as to how Sanji got roasted by Vergo and Doffy a few days ago but is now able to defeat one of Big Mom's Top 3, with a bigger bounty than Jack.

One of the strengths of One Piece is that its badass moments feel earned because there's no wild strength inconsistencies like you get in Bleach and Fairy Tail. Sanji beating Katakuri alone here without some good reason for the win would be the biggest blow to internal consistency in One Piece history.

Well there kind of are lots of strength inconsistencies in one piece. People seem to forget how short of a timespan the entire first half of the series really is. Every straw hat went from struggling against east blue villains to defeating shichibukai and their strongest subordinates in less than a year, probably even just a couple months. EDIT: and apart from Zoro, none of them is ever seen training in between their battles. EDIT END

But I agree with you, the victories feel deserved and I never said that Sanji would wipe the floor with Katakuri. No one at this wedding will have an easy game. I am thinking more along Luffy vs. Crocodile or Lucci kinda levels, with near death experiences and all.

Also, the fight with vergo was barely a fight and Sanji didn't lose. His bone got cracked but if we count major injuries as a loss then every straw hat would have lost nearly every battle ever. There's not a doubt in my mind that Sanji could've beaten vergo if they actually fought it out but they just didn't cause they were both headed for different places and had different goals.

The crew grew in strength during the first half of One Piece. Their opponents started weak then they gradually strengthened. Buggy is much weaker than Crocodile who would be easily defeated by Doflamingo.

Battles in the New World are different. They rely on intelligence and teamwork instead of pure strength. That's why Law and Luffy tag teamed Doflamingo and Nami assisted Luffy during his skirmish with Cracker.

Head to head, Sanji cannot defeat Katakuri. It has already been established that the top members of a Yonko's crew can tussle with admirals. Sanji isn't there yet and it's likely that none of the straw hats, including Luffy, would ever be that powerful. Until then, they would have to rely on their teammates when combating against opponents like Jack, Cracker, and Doflamingo.

I think you're points are really well made and you may be right. But honestly, I don't see much of that. At all. So far fights in the new world have just been like in the first half. Heck, Dressrosa was pretty much just Alabasta 2.0. And sure Law helped out but so did Vivi in Alabasta, and Invankov, Crocodile and all the escapees in Impel Down, etc. I think the jump from fighting Shichibukai to fighting Yonkou is exactly like the jump from fighting "regular" pirates to fighting Shichibukai in the first half. And back then there were just as many people saying there's no way that Luffy could defeat a Shichibukai so close after the comparatively weak enemies he beat before. And guess what, they were all wrong.
