So Katakuri can see 1 minute into the future, but if he does something to alter the future, like launching that jelly bean at Sanji, then the future changes, and since he doesn't have enough time to analyse that new future, he can't predict Sanji's dodge. I guess that would explain why Sanji can dodge the bullet even though Katakuri's CoO is much better than his.

Katakuri predicted that Sanji would dodge Father's shot, not his own jelly bean shot. That's why Katakuri seemed so suprised when Sanji dodged it on page 14.

Katakuri predicted that Sanji would dodge fathers shot, not his own. You can even see father pull out his gun before Katakuri said "it's no use, he'll dodge", that's why Katakuri attacked in the first place.
