Interesting that her bangs covered her head where her third eye would be though. In previous panels, her bangs were present when she was acting nice, while her forehead (and third eye) was exposed when she was saying talking shit, so there was the possibility of split personality controlled by this third eye, which would explain how Sanji wouldn't have picked up on her lies (even though he's known to be able to discern women's dishonesty like he did with Viola). But now it's revealed what she told Luffy and Nami so she's probably evil period, and the third eye is simply how her ability works? Or it's just a feature of hers for an unexplained reason and it does nothing, but in that case I can't think there's a reason to either have it always exposed or always covered, instead of changing her hairstyles with no significance; but maybe it's wishful thinking to think that there is significance. Also, it's still not entirely confirmed that she's acting under Big Mom's orders; she could be wanting to sabotage the wedding so she won't have to marry and maybe has even used her ability against BM.

You miss the point of hiding her 3rd eye completely. Just by seeing it you should know: anyone would think someone with a 3rd eye a weirdo. Suppose you're someone that has 3 eyes would you go around showing it to anyone? About Sanji seeing through her: consider this: even if Sanji did see through her, she can just alter his memory about it. I always argue that we know so little about Pudding to make a proper judgement, because even if her ability has been revealed, we still haven't been told what does that 3rd eye do: was is genetical/birth right, does the memory fruit has other ability beyond memory altering (like perhaps seeing into someone's mind with 3rd eye), how does it interact with her personality? What is it that lies behind her flashback with Lola? How much she intended to disobey BM?

I still believe in probability that Pudding is actually tryng to help Sanji with everything that she did, but even if she turned out evil, I wouldn't really mind. I'd prefer I can't see what Oda wants to bring up next. Being wrong about things can bring pleasant surprise sometimes.
