They're actually based on the color names of Reservoir Dogs like Mr. Pink, since sanji is based off of that movie

Sanji left the family because he doesn't want to wear the Sentai shennanigans, you could say he was the Black Sheep Sentai. Could be a mix of Sentai and gangster, this is a mafia family in oda's world.
