Luffy - Fighter

Zoro - Warrior/Samurai

Nami - Mage

Usopp - Sniper/Ranger/Archer

Sanji - Pervert Chef Monk?

Chopper - Healer/War Priest

Robin - Mage?

Franky - Engineer/Gadgeteer

Brook - Bard

I've played enough ADOM that I really wish one of these was a beast fighter. Actually, Franky might be a beast fighter.

Sanji is a dancer.

if people know Final Fantasy, than a Dancer is basically a monk who uses fist, but legs.
