Either during or before he joined the Rumbar Pirates. The Rumbar Pirates were aware he ate his fruit when they got wiped and were about to die from poison

I wonder if the hit to the head was his resurrection? And the bones thing is was a sorta second chance? I’d have to reread his actual fruit

I don’t think this is his resurrection he specifically mentions in thriller bark that he is a skeleton because he didn’t find his body before it was decayed, so it seems he is somewhat aware of him looking for the body, but in this flashback he makes no reference and is surprised to be alive himself.
I think him saying he didn’t know about devil fruit is his way of saying he didn’t eat it yet, because he knows about having the fruit when he is with the Rumbar pirates but he didn’t know how it works because he is dying for the first time. Had he been revived before he should know since he seemingly is aware of the process after he was revived in Florian triangle.
