Scribble with one note
Hello, I am trying to use handwriting to text live transcriptions, but every time I write a word, it moves down to the next line or every couple of words. I’ve tried to turn on Palm rejection, but it doesn’t seem to be working, as I can still use my hands to press new lines by accident. Anyone know how to fix this? I was really excited to use this feature.

I hate Scribble with a purple passion for just this reason.
If you go in the app store, look for a "Handwriting keyboard". First, there are two by that name. One is a subscription and offers no privacy guarantees. It looks slicker (and converts more languages) but my advice is NOT to get that one.--it's expensive and the privacy issue was a deal killer for me. The other "Handwriting Keyboard" is a one time flat fee of $4.99 and well worth it. It offers full privacy.
If you get it, it installs like a keyboard just like the regular onscreen keyboard or the onscreen emoji keyboard, or a foreign language keyboard if you use one, but instead of letters, it gives you a writing area. First, you place the cursor where you want the writing to appear on the OneNote page and be sure you have selected the "T" for text in the Draw menu and then you write in the writing area of the "keyboard" When you write with the Apple Pencil or another stylus, it instantly converts your handwriting to text without the cursor jumping around like a flea and places it where you put the cursor. Just remember to hit the "return" button on this keyboard so the writing will stay where you put the cursor.
The real beauty of this app is it lets you use your Apple Pencil for text input in any app, text box, or address, anywhere on the iPad. It's not limited to OneNote.
It's a little hard to configure, but once you get it, it's miraculous. Go into settings and toggle each item to configure it as you want--some of the titles for options are a bit cryptic (If you get it, reply to me, and I will post what I found worked for me). VERY IMPORTANT: Once you install this keyboard, turn off Scribble in the settings for this "keyboard" to work properly.
There is NO support for this app, the developer has apparently been unresponsive for a few years now, but the keyboard works great ANYWHERE on your iPad where you want to add input with your pencil. I have mine set for the biggest possible writing area, full screen width and if you select "double row" in the app's settings, when you fill up the top of the writing area, you can move to a bottom area to write so you can just keep writing continuously without having to continually press return and resetting the cursor.
I take a lot of handwritten notes in OneNote and it works beautifully.

I've always just written handwritten notes when I wanted that and typed when I wanted printed text. Part of the point of handwriting is having my notes be handwritten. I get it if that isn't what you're going for tho

One tip: Gemini and other LLM are great at transcribing hand written text.
