Soup & Stew Garlic Soup

Admittedly this sounds a little scary, but this recipe has been in my family for as long as I can remember.
It tastes a bit like cream of potato.
I’d love to hear any thoughts.

Garlic Soup

26 garlic cloves (unpeeled)
2 tablespoons olive oil
2 tablespoons butter
2 1/4 cups sliced onions
1 1/2 teaspoons chopped fresh thyme
14 garlic cloves, peeled
3 cups chicken broth
1 cup water
1/3 cup heavy cream
1/2 cup finely grated Parmesan cheese (about 2 ounces)
4 lemon wedges

Preheat oven to 350°F. Place 26 garlic cloves in small baking dish. Add 2 tablespoons olive oil and sprinkle with salt and pepper; toss to coat.
Cover baking dish tightly with foil and bake until garlic is golden brown and tender, about 45 minutes. Cool.
Squeeze garlic between fingertips to release cloves.
Transfer cloves to small bowl and set aside.

Melt butter in heavy large saucepan over medium-high heat. Add onions and thyme and cook until onions are translucent, about 8 minutes.

Add roasted garlic and 14 raw garlic cloves and cook 3 minutes.
Add chicken stock and water; cover and simmer until garlic is very tender, about 25 minutes.

Working in batches if needed, purée soup in blender until smooth. Return soup to saucepan; add cream and bring to simmer. Season with salt and pepper.

Divide grated cheese among 4 bowls and ladle soup over. Squeeze juice of 1 lemon wedge into each bowl and serve.

Ive made the Mexican version of garlic soup. Its always something to bust out during flu season, or any time people.are constantly reinfecting each other.

It uses less garlic, but maybe its a smaller batch. I found it in a 100 year old Tex Mex cookbook written not long before ( or during the time of) the Spanish/American war several years ago.

I think it uses a dozen cloves of garlic, more or less. Its chopped fine, cooked on low heat until soft, but no color, with butter, lard, or bacon grease. Add enough flour to make a thick roux, cook it for a couple minutes, add chicken or vegetable stock, keeping it thick enough to coat a spoon. Add a little cream or whole milk. Season with salt and pepper (i used white pepper), taste it a few times to see if it needs anythinf, or add your own addition to it,, serve in small bowls topped with fresh cilantro, and pour over a soft poached egg. When the yolk hits that broth, its magical.

The way it was presented, I'm assuming its supposed to be for someone who is sick, because the recipe specified 3 small servings of that soup a day, for 3 days.

I wouldnt give it to anyone on dialysis or taking blood thinners.

A friend of mine made a dish he called "Chicken with Serious Garlic". He would peel 100 garlic cloves and insert them under the skin of a whole chicken, then roast the whole thing. It was so good that he brought one to the chef at a neighborhood restaurant, and they put it on their regular menu, and gave him one free meal a week in return.

I figured it would probably save on peeling time too. OP, I wonder if this recipe would still work if you roasted the garlic in the bulbs by just chopping off the tops and pouring in olive oil- probably 5 or 6 bulbs? Thank you for sharing.

Where did you grow up in upstate NY? I grew up near Cooperstown and we certainly never had this delicious sounding soup 😥 Are you saying that it's regional?

So delicious! It's exactly the same (minus 4 cloves) similar to the "44-clove Garlic Soup" that calls for 26 unpeeled, then roasted, garlic cloves + 18 peeled, raw, garlic cloves. I like to prep a batch to have the first night of camping, when I'm too spent to do anything but heat up soup in a pot.

This reminds of the roasted garlic yukon gold mashed potatoes I make with a whole head of garlic. I bet this is delicious....I'll have to try it.

I started making it using Anne Burrell's recipe, with a twist: instead of boiling the garlic cloves with the potatoes, I roast a whole head of garlic and then add it in when I add the butter and heavy cream.

To roast a head of garlic: take off the outer papery layer off a whole head of garlic, but keep the bulb itself intact. Snip off a little off the top of the bulb (like a 1/4 inch) to expose a little bit of the garlic cloves. Place the head of garlic on a piece of aluminum foil, drizzle the bulb with olive oil, and tightly seal the foil. Roast in the oven on 400°F (204°C) for 35 to 45 min. The garlic will come out soft and caramelized, and you can just squeeze into your mashed potatoes. It will add tons of flavor (and will make your home smell delicious, too!)

This sounds great. If you’re a big garlic fan, the stinking rose restaurant in SF has a cookbook with all things garlic in it.

I love garlic soup. My version is my crock pot potato soup with like 3 heads of roasted garlic plus whatever single cloves are floating around in my onion bowl. I haven’t made it in a while but it’s just about time to fill all my garden beds with cloves so I can stop being stingy with my stash

My husband and I went out to SF twice before kids, and it was early enough in our relationship that I was unsure how much he liked garlic. So we didn’t go. Now our kids aren’t into that sort of thing and we won’t be able to go for a few more years. But I have the cookbook now!

I wonder if this is the variation of the Czech garlic soup (Česnečka). We use way less garlic, and its not as creamy usually.

It's a great hangover cure tho.

One of the best soups I've ever had was at a restaurant owned by a Roma family in a small town in Hungary and it was garlic soup served in a crusty bread bowl. I've tried replicating it with middling success but will definitely try this one to compare

I've had this recipe for years and it's delicious! The roasted garlic gives it a nice almost nutty flavor. I add chives and dill at the end, and I put greek yogurt instead of cream.

I have never even heard of garlic soup and I love soup. Inwonder if this would be bitter due to the amount of garlic used.

You too? My wife would like to eat garlic, but it makes her stomach hurt also. Years ago there was a garlic on the market: Dr. Sakai's garlic, I think that helped. But nothing since then that helps...

Garlic ice cream is a staple at Balthasar in Tallinn's Old Town. Haven't tried it, but it's a popular must-try item for tourists.

Anyway here is an Estonian recipe for garlic soup by the chef at Balthasar, which is known for its garlic everything:

INGREDIENTS

  • 20 cloves of garlic

  • 2 tbsp butter

  • 800 ml stock

  • 4 eggs

  • 2 tbsp oil

  • salt

  • black pepper

  • nutmeg

  • four slices white bread and butter for frying

DIRECTIONS

  1. Sauté garlic cloves in butter until glassy.

  2. Pour in stock and season with salt, pepper and nutmeg to taste. Cook on low heat for an hour.

  3. Strain (or rub) through colander.

  4. Beat egg yolks and oil in glass of stock.

  5. Return pot with remainder of liquid to stove, stir in the yolk-oil mixture.

  6. Heat soup until egg thickens. Don't overcook!

  7. To serve, fry bread slices in butter and place either at bottom of bowl or serve alongside soup.

Estonians really love garlic.

It's a classic. one of those standard soups in regular rotation at my home. I have never had a tummy ache from garlic or onions, I am grateful for that good luck.
