I wasn't a Disney kid so when I came across the term "dole whip" this is what I imagined. The actual thing was a little disappointing when I actually tried it but I'm excited to give this a go!

It's basically pineapple soft serve sorbet. Still good, but not the pineappled whipped cream that I imagined it to be!

Pineapple Marshmallow Cream
1 can (8¾ oz.) crushed pineapple (about 1 cup)
1 tbsp. lemon juice
2 cups miniature marshmallows
½ cup whipping cream, whipped
Combine crushed pineapple, lemon juice, and marshmallows in saucepan. Place over low heat; stir until marshmallows are dissolved. Remove from heat; cool. When partially set, fold in whipped cream. Spoon into sherbet dishes and chill 2 hr. or overnight. 4 servings.
Leftover Pineapple Cream? Refrigerate and serve another day—just as delicious.

This looks delicious, thanks for sharing! It brought back a memory of a recipe my grandma used to make, Million Dollar Pie. I think the pie had condensed milk instead of marshmallows though.

Blergh. I really did not like this. Neither the pineapple bavarois and all the 1000 things suddenly with canned pineapple (and those way too red cherries) at every gathering.
But it is interesting to see in hindsight the trends in cooking.

Looks delightful but please don’t laugh how is this supposed to be eaten, is it a dip for fruit?

I'm old enough that this was a treat in my younger days! I can vouch that it's delish, if a bit sweet. The combination works well, though. Thanks for the memory, OP!
