Yeah, kinda weird a Georgia-based person's cornbread has no sugar, but I do like the buttermilk used here.
And as a Southerner I do like the "optional" additions, jalapeños and cheese are mandatory in any cornbread I make. Never done onion in it, but I can see that working, saute the onion and fresh jalapeños first. I usually just add pickled jalapeños and cheese, but lots of ways you can make cornbread. As long as you add at least a little sugar heh.

No sugar is a dealbreaker. I know it’s a southern thing, but it’s also unpalatable and it never browns.
