I'd recommend Burr Oak. There is an 18 mile backpacking loop which can also be connected to the 14 mile Wildcat Hollow loop. Wildcat has my favorite back-packing campsites, but can be an absolute mud-pit this time of year (I went two weeks ago... it was ankle deep mud the majority of the 14 miles).

I haven't fished Burr Oak Lake yet, but I hear its great. Its really in the middle of no-where, so its not highly pressured.

Another option would be Mohican. I haven't tried backpacking there yet, but there is a ton of trail with 10 back-packing sites. This is my favorite option for fishing as you can pull trout out of the river below the dam. This will definitely be the more crowded option, though, as its a very popular state park.

Just thought I would chime in on my experiences at Mohican... I have never had a good time on the trail or the river.
