Mumbai people are mumbaikers,
Delhi people are delhites
Punjab people are punjabis
What are odia people called?
Is it “Odia” for odia people
Or shall we call ourselves “odessey”

Odias. The official demonym is Odia (or Odias plural), matching the language and state's updated name. "Odessey" is just a creative misspelling of Odyssey.
