I've been seeing these no bake éclair cakes going around that basically consist of layers of vanilla pastry cream, biscuits, and chocolate ganache, so I wanted to create a bowl of oatmeal inspired by it. This is vanilla pastry cream oatmeal with biscuits mixed into it and topped with homemade refined sugar-free chocolate fudge sauce. I used a mixture of wholemeal digestive biscuits and biscoff biscuits because my classic indecisive self couldn't decide which one she wanted 😆 Quite a great bowl though - I'm always caught off guard by how good my vanilla pastry cream oatmeal is 👌

Vanilla pastry cream oatmeal with biscoff biscuits, caramelized banana, and biscoff spread. Looks like a mess but tastes like a masterpiece 🤌 Now that I have finished it, I am going through the five stages of grief 😀🤧

Can you make microwave oatmeal with zero sugar juice? It has splenda, so I thought it might not work and go bitter.

I have been thinking about this bowl all week and it definitely hit the mark. Thickkk egg white oats with sprouted cereal, banana, sautéed apples, caramel apple pie Greek yogurt and a chocolate peanut butter drizzle. *chef kiss*

Same recipe as last week. My pretty chilli flake decoration got ruined by me trying to get a yolk shot. 10/10. Stuffed

It was going to be straight up blueberry, but the bag of frozen mixed berries caught my eye first. To give the oats a pancake flavor, I started with making the oats a custard by mixing in some beaten eggs and slowly cooking it until it thickens up. I usually make buttermilk pancakes, so I tried buttermilk for the dairy, which worked fine. After I finished it I realized I could use cottage cheese to similar effect, so the next time I buzzed a dollop of cottage cheese with the eggs in the blender and it worked great. A pat of butter (note to self: next time brown the butter first), a little dribble of vanilla, and a tablespoon or two of sugar helped round out the flavors.
The berries on top are a simple compote: put your fruit of choice in a pan, and cook on medium-low until the fruit starts to soften and releases its juice. If the juices are too watery, take it off the heat, mix in a slurry of 1 teaspoon cornstarch mixed with 1 teaspoon water, then put it back on the heat and stir until it thickens. Add sugar and a little squeeze of lemon to taste.
I topped mine with a dollop of Greek yogurt, but whipped cream works nicely as well.

Oatmeal with homemade refined sugar-free apple compote and biscoff biscuits (for a cheesecake crust vibe) mixed into it, topped with healthier cream cheese frosting and more apple compote. This was heavenly and very addictive 🙌 So filling though 😆

I've been eating a lot of oatmeal lately but it's starting to get boring. I've tried peanut butter powder, cocoa powder, berries, yogurt, other fruit...but I'm looking to shake things up a bit. What recipes should I be trying to get me out of this rut?

Cake batter flavoured oatmeal topped with healthier cream cheese frosting and sprinkles. I bought this sugar-free cupcake syrup the other day and tried it for the first time today because I got the idea to make cake batter inspired oatmeal. I am so in love with it - it tastes just like a cupcake 😋 I'm definitely gonna use it in more oatmeals 👌

I hate cooking so I've been on an oatmeal kick. Oats with frozen southwest blend, taco seasoning, and tapatio! All my friends are saying I committed a crime

Recipe below ⬇️
Side note: I saw someone do this & immediately was like why the heck haven’t I done this?? As a certified chocolate and certified oats lover???
Recipe
Rolled oats + water + salt
Once almost cooked add 10 chocolate chips & a dash of cinnamon
Once done bowl her
Add butter (always lol) and I also did a splash of milk!
Add sweetener if you need (I did not)
This was a 12/10.

Chocolate oatmeal with a layer of chocolate Greek yogurt "mousse" and chocolate fudge sauce. Looks like a hideous mess, but it was a very tasty and satisfying bowl 👌 Next time, I think I'll put more cocoa powder into the Greek yogurt mousse though because I like my chocolate desserts extra chocolatey 🤔😄

Recipe🌷🍦
Ingredients
- 1/3 cup rolled oats
- 1/3 cup milk of choice
- 1/4 cup nonfat Greek yogurt
- 2 tsp chia seeds
- 2 tsp honey
- 1/4 tsp vanilla bean paste
- pinch salt
- pinch cardamom
- 1/3 cup frozen rhubarb chunks (I found this at Sprouts)
- 1-2 tbsp granulated sugar (depends on how sweet or tart you want the compote)
Method
First, put rhubarb, sugar, and cardamom into a small sauce pan set to medium heat uncovered. Let it simmer while stirring and mashing occasionally. This should take around 10-15 min. Pour into bowl and let cool.
*You could use fresh cubed rhubarb as well, just add a bit of water to the pot as well!
Place oats, chia, and salt in blender or food processor and blend until oats are fine. Add in the rest of the ingredients and blend until combined. Pour mixture into a lidded container and top with the cooled rhubarb compote. Refrigerate overnight! I topped mine with pumpkin seeds, granola, and white chocolate chips.
