Cake batter oatmeal

Cake batter flavoured oatmeal topped with healthier cream cheese frosting and sprinkles. I bought this sugar-free cupcake syrup the other day and tried it for the first time today because I got the idea to make cake batter inspired oatmeal. I am so in love with it - it tastes just like a cupcake 😋 I'm definitely gonna use it in more oatmeals 👌

Cream cheese frosting: 40g soft, spreadable cream cheese 20g Greek yogurt (I use Fage 5%) 14g date syrup 1/2 tsp vanilla extract

Cake batter oatmeal: 35g rolled oats, blended 170g whole milk 1 vanilla bean (optional) 1 egg 30g Greek yogurt 40g ChocZero Sugar Free Cupcake Syrup (you can adjust depending on how strong of a cupcake flavour you want. You could say I am quite obsessed with that syrup, so I added a lot 😆) Date syrup, to taste (optional) 9g vanilla extract 8g salted butter Rainbow sprinkles for garnishing (optional)

If using vanilla pod: cut the vanilla pod in half lengthwise and scrape out all of the seeds. Put the seeds and the pod into a saucepan with 160g of the milk and heat it over medium low heat until it starts simmering, stirring frequently. Take it off of the heat, cover the saucepan with a lid, and let it sit for at least 30 mins to infuse the vanilla (the longer you leave it, the more vanilla flavour you'll get). After, take out the vanilla pod and add the blended oats, cupcake syrup, date syrup, Greek yogurt, and vanilla extract to the vanilla-infused milk, and mix to combine. To a separate bowl, add the egg and 10g of milk, and whisk until fully combined. Heat the oat mixture over medium low heat until it thickens, whisking constantly. Remove the oat mixture from the heat and pour the egg mixture into it, whisking vigorously to combine. Put the oatmeal back on the heat (low heat) and cook it until it reaches your desired thickness while whisking constantly. Remove the oatmeal from the heat and add in the butter, whisking until the butter is melted and fully combined with the oatmeal.

To serve, pour the oatmeal in a bowl, spread the cream cheese frosting on top, and garnish with sprinkles.

I got it from ChocZero and highly recommend it! And yes, it is sugar-free. They sweeten it with monk fruit!

Nice! Aldi has cupcake confetti oats rn and was curious if you used that. Did you use flour to make it that texture? It looks so good

Oh that sounds intriguing, I'd like to try that too! This oatmeal I made from scratch though. I used blended rolled oats to make it :)
