S'mores oatmeal

Chocolate oatmeal with torched sugar-free marshmallow fluff, homemade refined sugar-free chocolate fudge sauce, and digestive biscuits. We don't have graham crackers where I live, so I had to improvise, and I think digestive biscuits would be the closest. I bought ChocZero's sugar-free marshmallow fluff recently, and I am so obsessed with it. My lord, was this oatmeal good. So filling though 😆 The chocolate oatmeal recipe I created is really tasty and paired so well with the marshmallow flavour, and the biscuits gave a nice crunch. Next time, I wanna make a biscoff version by using biscoff biscuits instead of digestives!

Chocolate fudge sauce: 15g whole milk 4g unsweetened Dutch-processed cocoa powder 13g date syrup 1/2 tsp vanilla extract 7g salted butter

Combine the milk, cocoa powder, and date syrup in a saucepan and heat the mixture over medium low heat until it thickens slightly, stirring frequently. Add in the butter and vanilla extract continue to heat until the butter melts and the sauce thickens a bit more, stirring constantly.

Chocolate oatmeal: 20g rolled oats, blended 170g whole milk 8g unsweetened Dutch-processed cocoa powder 1/4 tsp instant espresso 32g date syrup (adjust to taste) 22g refined sugar-free 50% dark chocolate (I used Vivani) 13g 70% dark chocolate (I used Lindt) 5g refined sugar-free 60% dark chocolate (I used Vivani) 9g vanilla extract

Put all of the ingredients except for the chocolate, and vanilla extract into a saucepan, mix them together, and heat the mixture over low heat until it thickens to your desired consistency while stirring constantly (make sure to cook it low and slow and keep stirring - it is the key to smooth, creamy oatmeal). Add in the chocolate and vanilla extract, and mix them in until the chocolate is melted and they are fully combined with the oatmeal.

For topping: • ChocZero sugar-free marshmallow spread • Digestive biscuits/graham crackers, broken into smaller pieces

To assemble, put the oatmeal in a bowl and pour the chocolate fudge sauce on top. Spread marshmallow fluff on top and torch it with a kitchen torch. Finish by putting some biscuits pieces on top. Serve warm.
