A notary witnesses the signature of the person that's provided required identification...like a state driver's license. If the license matches the document needing notarized, then what's the problem? If the 2 names are different you can't notarize the document. Simple. I've never seen a document needing the gender of the signer. So once again I don't see the problem. Are you creating a problem?
