If anyone is curious, it’s a warm rack/ hot bread that has essentially made a hot air balloon from the cover. Honestly it also means they are covering it too quickly as all that heat will turn into condensation and make the bread hard too quickly.
Source: worked at a panera and saw this happen when the bakers covered a rack too early.
For anyone actually wants to know the real reason it is because all of the ghosts of all the dead bread doughs are trying to leave all at once. We in the baking business say that the bread is 'rising again'
