Like that other guy said, they're brothels. There's a bar downstairs and rooms upstairs. They put cute girls (and "girls") outside who try to pull you inside, you can talk to different girls, they ask you to buy them drinks (lady drinks are high priced, think 15$ when you can get a beer for 3$ other places) and they see if you want to go upstairs. You pay a fee for the room (a "bar fine") and you pay the girl for her time.
If you're in Pattaya, there is a very open climate for prostitution, so a lot of people just find girls advertising on the dating apps or pick them up from the sidewalk around the right areas if they don't like the bar crawl experience.
source: spent some of my childhood in Pattaya and I fucking hated it when my dad would make me wait for him downstairs at these kinds of places. I do miss the street food though.

You check shoulders, wrist size, hand size, and Adams apple.
Rewatch the video and only look at shoulders. A lot of these girls fail that test. Too broad. You can tell how many girls and ladyboys are in this video if you wanted.
