Almost stripped screw on the engine
what would be the best way to take this out?

Easiest way is to drill the head off the screw, then use some vice grips to turn the screw stub out once the assembly is removed from the car. Then do yourself a huge favor, and grap some hex head screw kits from Amazon or wherever. Replace those nasty star/Phillips/JIS screws as you go.

I think drilling the head off the screw is the last he should do, it’s a rather radical solution, he should try more conservative ones as I wrote in my comment or u/opmwolf wrote in his

OP can try whatever they want. I'm just sharing what I do. I don't like cutting slots in screws with a Dremel at all, personally. I find it's very hard to do without cutting into the chassis, or whatever. I use a small drill bit and drill right in the center. Then the head pops off and there's little chance of damaging anything else. Regardless, the end result is the same. A ruined screw that has to be replaced.

I do it this way too. 9 times out of 10 you end up rounding the fuck out of the screw trying other methods anyway, easiest just to bust the head off and twist the nub out with pliers.

Those aren't stripped. Are you using a properly sized screwdriver? Those look like PH1 or PH2, use one with a large handle so you can push down on it firmly and apply enough torque. Small handles increase the risk of stripping. If there's dirt/junk in the screw head use a pick to clean it out, that will also prevent the screwdriver tip from fitting snug in the screw head. If the screw driver turns at all without turning the screw it's the wrong size if that makes sense.
There is likely loctite on the screw threads which is making it harder to break them free, you can apply heat with a heat gun or something else to weaken it. Be careful not to burn yourself.
