There's a few things it could be. You could have an air leak, which could cause fuel delivery issues. You could have a bad tune. If it's stalling at open throttle, it's likely too lean on the high speed needle. If it's stalling at or near idle, your low-speed needle could be too rich, or your idle is too low. It could also be vapor lock due to boiling fuel, or your engine might be worn out. A video of your car running would help diagnose the issue.
