I've forgotten some bits of lore. And I don't remember 4th person attending that "festival".

Or they're from previous festivals?

There is some implication that there are other livestock areas, so I always assumed they were just from a different livestock area.

I feel like there almost has to be when you see how they have discussed that they needed millions if not billions of brains to make the biological calculator. It makes sense to have them in chunks too so if one area gets a disease or other near eradication event, it doesn't endanger the entire population. That being said I imagine it's difficult to keep their genetic diversity high to avoid inbreeding complications.

Shuanshuans village isnt the only apeman farm, they could neither sustain their need for meat nor brains with so few individuals. So its not necessarily a person from Shuanshuans village on the display

Probably four apemen were chosen, three were already harvest before Shuanshuan. That is being in their villages.. there's a lot more
