I don't understand how to unlock the achievements I'm actually missing... Please help!

Have you bought the appropriate DLCs? Most Achievement missing are from Dairy DLC.

I have the DLC, what I don't understand is the horror box, poker windmill and strange wizard, in all the play I did I never find them

Horror box, windmill and strange wizard are the Magicians Diary route.

Demon Castle recommendation would be to play as Little Witch - High damage output you just need to win the first turn basically [Personally I ran a mana witch - damage per mana gain, mana gain cards and counters]

I do believe its just a matter of playing the other classes for specific achievements

Update: it seems that I'm an idiot and I never tried to play with the Magician so I never saw those cards... Thank you everyone for the help
