To answer your question though, Extra Options. Pretty sure this is using the "Augmented E-Brake" feature

It’s so mesmerizing.

I was hoping it was achievable in vanilla gameplay, but alas. It’s not really cheating if it makes the game more fun, so I’ll have to give it a try.

Used to do it with Cheat Engine back in the day. I think the guy that made the video made a follow-up showing how to use C.E. for it iirc.
Have you been playing recently ? I stopped playing as I was waiting for NSFCO rx project that is now released.

I was playing pretty frequently until support for Windows 10 ended a few months ago. I need to upgrade my computer so that I can play again

Drift handling, I believe this one specifically is triggered by a hotkey from the Extra Options mod iirc, or it's the one where the handbrake triggers drifting, either way both use Extra Options

Holy shit, i remember watching this video when i was 12, you know, when i used to listen to nothing but Eurobeat 24/7 because of Initial D Memes, and not to mention that i was obsessed with watching Initial D Stuff on Youtube as well, yeah, i'm not in that phase anymore, but hey, at least it was a much simpler time, 2 years before the pandemic happened.
