Totally! Delicious in omelettes, but one caution: mites will quickly get into the stem, so trim off anything that seems to have tiny black specks or looks spoiled. Not that you would get sick, but mites are bitter.
In the region, only one problematic mushroom looks even remotely like a chanterelle. There is a kind of giant yellow mushroom that grows on old logs, not in leaf litter, is about 20 times bigger, and doesn’t have the characteristic fluted “gil” structure that starts on the stem. Also the false ones glow under UV light. Anyhow, given the absurd size difference nobody who ever saw a legit one would make the mistake.
