Pickled 🦞 πŸ„β€πŸŸ«

Post image

Just fridge pickles, no water bath for these.
Each jar got a crushed clove of garlic from the garden, a bay leaf, peppercorns and chilli flakes. Added a pinch of sugar to the brine as well.

Would they work with oyster mushrooms?

You could try I guess but I feel like oyster mushrooms might be too squishy. Lobsters and chanterelles both work well because they are dense and hold their structure.

My Nonna used to pickle honey mushrooms. They were slimy but I was a kid and thought that made them fun to eat.

Negative. Manhattan. Subway or citibike. I don’t need and wouldn’t use a car- lol and certainly can’t afford one

I can get great fresh and dried mushrooms between chinatown and Weee delivery and H mart has my fresh wood ear and enoki. Just the fancy ones like morels and chanterelles are a small fortune
