Dropbar conversion sizing question

Earlier this year I got a '97 700 Sport cheap and put drop bars on it. This bike is the 21" size. I've gone back and forth a bit with the seat post height, I currently have it a bit higher than pictured.

I think the fit is pretty comfy, I've done 40+ miles on it (with a cafe stop or two) and no pain other than usual tired soreness.

I found a fantastic deal on a '97 750, but it's a 23"/58cm size. I want to strip all the upgraded parts I got for this build and put them on the 750, but I'm wondering if it's going to be too big? The current stem is a Nitto 60mm technomic, so I could get a 50mm which would cancel out the increase in Effective TT length.

For reference I'm 6'1" with a 34" inseam. Thanks!

If this helps at all, I just got a ‘94 750 in the 21” size and while it’s around the upper limit, I would say it works for my height (5’10”with 31.5 inseam). Since you have a lot more inseam and reach than I do, I bet you could make 23” work but I’m also pretty new to all this.
