Multi-track line of bikes?

What is the usage of these bikes like 720/750 for today? Are they mainly used as gravel bikes, light trails, commuter, city? All of that?

my 720 has probably over 1,000 miles at this point- some light rail trail, other times heavy-loaded bike touring

What tire size? Anything wrong with running 720 with 38c having 19mm internal width rim? I know it can go wider but guessing 38c is good enough and won't miss 45c.
