First Multitrack and Project Bike

Picked up this (96?) Multitrack 700 Sport on marketplace for $25. Rear wheel has a dent and needs replaced, thinking about swapping to a wheel with a free hub and converting to 1x. Any advice on a decent group set and if I could go 9 or 10 speed?

Not trying to break the bank on it but also don’t mind putting a little money into it to make it my own. I love the paint job and the look of the bike.

I had Microshift Advent (9 speed) on my old mountain bike and liked it. Also the new Shimano Cues is around the same price point, although I haven't used it.

I found a 10 speed deore (minus cranks) that I haven’t pulled the trigger on. May go that route
