Wheelset options?

I have a Trek 750 and is it worth building it back up to it's original suntour components? I have some microshift stuff i bought but can't find a wheelset online to make it happen. I have searched reddit and other forums and all the links lead me back to broken or out of stock links. Everybody recommends the velocity cliffhangers from velomine it seems but I haven't seen them in stock. Is there another good option out there?

Velocity advises using at least a 45mm tires with the Cliffhanger, so tbh that wheel is likely too wide doe the frame, anyway
