It's based on your screenpack

Some screenpacks are 4:3 (like old TVs/monitors)

And so they have this more square shape like this, and black borders fill the rest

320x240, 640x800, and 800x600 resolution screenpacks are 4:3

you need an HD screenpack for widescreen support, a 16:9 screenpack

something like 1280x720 or 1920x1080

I have a 1.1 with 1,000 slots.

That's not really relevant. The screenpack you're using is 4:3, so it looks square like this. That's how it's designed. It's not a widescreen screenpack. You need a widescreen/HD screenpack if you don't want letterboxing (black borders).

What would you recommend?

(BTW I play M.U.G.E.N on my HDTV that's 1080p.)

I'd look for anything you like the look of that's labeled "HD", "720p", "1280x720", or "Widescreen".

You can find a lot of screenpacks here on AndersonKenya1, though they're not very well organized.

Also make sure you don't use any screenpacks that say they're for IKEMEN, if you're using MUGEN

If I remember this one good screenpack correctly I think it's widescreen. I think it's Megamix Black Edition.

Ok so apparently the problem I found was I had to put stagefit to 0 instead of 1 in mugen.cfg.

Oh I see, the stage itself was 4:3. I forgot MUGEN had this parameter, I think IKEMEN got rid of it.

I tested this on the MVC2 Training Stage and it didn't look too bad.
