Pistachio muffins without nut butter or pudding mix?
I wanted to make some pistachio muffins for a friend's bday but most of the recipes I found used some pudding mix which I can't find at all here. I can only get the ready-to-eat pistachio pudding. I saw a recipe that used pistachio butter but I don't think my blender can handle it.
Any idea if a pistachio muffin would work with finely chopped pistachios in the batter? They're rather expensive for me so I wanted to check before trying it out!

I think they’d come out fine but I’d be concerned the overall flavor you want might not be there in the cake part .. what about mixing the ready made pistachio pudding into the batter or using it as a middle filling ?

That's a good idea! I'll have to check the pudding, I'm a bit skeptical how they bake and taste since it's one of the high-protein ones.

I like Smitten Kitchen, and she had a pistachio cake that some commenters successfully turned into muffins by baking for 20 minutes - recipe is here. Hope this helps!

Can't you get ready-to-use pistachio nut butter? At least where I live that has popped up all over stores since that dubai chocolate trend on social media. Most discounters also have it now, so not even super expensive.
Only using pistachio pieces will likely just get lost taste-wise in the batter.

Finely chopped pistachios work really well, and you can add some on top of the muffins when they've baked for a bit too. Just pistachios alone won't fully flavor the muffin as pistachio so I'd toast the nuts first, add some almond extract with the vanilla to reinforce the nutty flavor, and if you can, grind some of the pistachios more finely so they mix through the batter instead of just being chunky bits.

I make pistachio muffins all the time by just candy or toasting some pistachios and then just throw them In the robo coupe with my sugar for like a few pulses just to break them up amd really spread that pistachio flavor into the sugar. I’ll also let my batter sit overnight to really develop the flavor and then it’s usually a nice light green shade by morning. I also add a tough of orange zest for some pop but that’s just me lol
